Roasted Green Beans Dijon Recipe Low Carb

1 pound fresh green beans, trimmed

Vegetable oil spray

2 tsp olive oil

1/2 tsp Dijon mustard

1/4 tsp salt

1/4 cup snipped fresh parsley

Cooking Methods

  1. Preheat the oven to 425 degrees.
  2. Be sure the beans are thoroughly dry. Put the beans on a nonstick baking sheet. Lightly spray them with vegetable oil spray. Arrange the beans in a single layer on the baking sheet. Spray again.
  3. Bake for 10 minutes, or until tender.
  4. Meanwhile, in a small bowl, stir together the oil, mustard and salt.
  5. To serve, drizzle the oil mixture over the beans. Stir gently. Sprinkle with the parsley.
