Succulent Bread With Pumpkin And Wheat Flour

Bread is the chief part of almost everyone’s diet. It can be eaten as a savory meal or a sweet dessert. There are several ways to prepare bread and you can use just about every one of your favorite ingredients to make various kinds of pumpkin bread recipe at home. You can add fruit, nuts, spices, meat and more to the bread to get a unique blend of flavors. Given below is a healthy pumpkin bread recipe which you can prepare at home and enjoy.

What you need:

– Light brown sugar – 1 cup

– Egg whites – three

– Fresh mashed pumpkin – one (1) cup

– Canola oil – quarter of a cup

– Yogurt – 1/3 cup (you can replace with non-cream low-fat yogurt for the fat conscious)

– Vanilla essence – one teaspoon

– All-purpose flour – 1 cup

– Wheat flour – 3/4 cup

– Baking powder – one and a half teaspoons

– Ground cinnamon – one (1) teaspoon

– Ground nutmeg – half (1/2) teaspoon

– Baking soda – half (1/2) teaspoon

– Salt – half a teaspoon


– You will need an 8 in. bread loaf pan for this recipe. Grease the pan and dust with a small amount of flour to prevent the bread from sticking to the sides.

– Preheat the oven to 350F.

– In a bowl, beat the egg whites and sugar together.

– Add the yogurt and oil to this and whip some more to combine all the ingredients.

– Add the mashed pumpkin and mix gently.

– In a fresh bowl, sift the all-purpose flour, wheat flour, baking powder, baking soda, nutmeg and cinnamon.

– Add this blend to the pumpkin blend, one tablespoon at a time, and mix after each addition. Do not over-mix the ingredients.

– Pour the mixture in the greased bread loaf pan and smooth the tops.

– Bake in the pre-heated oven for 45-50 minutes. Check by inserting a toothpick in the centre of the loaf; if it comes out clean then the bread is done.

– Let it cool in the pan for approx. 10 minutes before inverting the bread and cooling on a wire rack.


– Add a few roasted walnuts in the bread batter to add some more crunch.

– In place of all-purpose flour you may substitute a whole wheat flour and oat flour mix.

– Sprinkle a small amount of roasted flaxseeds on the bread batter before baking to add a crunchy texture.

– You can also use some apple sauce in the batter instead of oil.

Pumpkin bread is nice and moist and can be stored in the fridge for as much as 2 weeks: Once the bread is totally cooled, wrap it in silver foil and store it in a zip lock bag in the fridge. Thaw to room temperature before using.
